Perfectly Persimmon

A pairing of sweet persimmon & warming ginger to welcome the winter season.


Ingredients

  • 1.5 oz | 45 ml tequila blanco

  • 0.75 oz | 25 ml persimmon syrup (recipe below)

  • 0.5 oz | 15 ml fresh lemon juice

  • Splash of ginger beer


Instructions

In a mixing glass, combine the tequila, persimmon syrup, lemon juice, and a splash of ginger beer. Add ice and stir until well chilled. Strain into a coupe glass and garnish with thinly sliced persimmon.


Persimmon Syrup

  • 3 persimmons

  • Equal amount of white sugar by weight

  • Lemon juice to taste

Dice the persimmons into small cubes. Weigh the diced persimmons and add an equal amount of sugar by weight. Mix thoroughly and store in an airtight container at room temperature overnight. Strain the syrup and balance the sweetness to your personal taste by adding lemon juice one teaspoon at a time.

Lasts up to 1 month in the fridge.
